SHRIMP ON CRACKER APPETIZERS
1. Mix all ingredients together except shrimp.
1 cup mayonnaise
1/2 cup finely chopped parsley
1/2 cup finely chopped green onion
2 tablespoons horse radish
1 5-1/4 ounce jar Zatarains mustard
Dash of Tabasco or red pepper
Lemon juice to taste
2 pounds medium shrimp, cooked
2. Fold shrimp in gently to prevent breaking.
3. Marinate in refrigerator for 24 hours.
4. Serve on Ritz crackers, one shrimp to a cracker, makes about 20.
