MEXICAN CORNBREAD

  • 2 packages cornbread mix
  • 1 carton (8-oz) sour cream
  • 1 can creamed corn
  • 2 - 3 jalapeno peppers
  • 1/4 cup oil
  • 2 eggs
  • 1 lb. cooked and crumbled ground chuck, salt and pepper to taste
  • 2 green onions, chopped
  • 1 package (12 oz) shredded cheddar cheese
  1. Mix together ground chuck, chopped onions, and shredded cheese.

  2. Pour half the cornbread mixture into pan, add the layer of meat, onion
    and cheese. Top with the rest of the cornbread mixture.

  3. Bake at 350 degrees for 50 minutes until done through the middle.
