CHICKEN MARBELLA

Marinade
  • 5 - 6 chicken breasts
  • 1 head of garlic, peeled and chopped
  • 1/4 cup dried oregano
  • Coarse salt and fine fresh-ground pepper to taste
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 cup pitted prunes
  • 1/2 cup pitted Spanish green olives
  • 1/2 cup capers with a bit of juice
  • 6 bay leaves
  • 1/4 cup Italian parsley or fresh cilantro, finely chopped

  1. To marinate mix chicken and all the above ingredients together
    in large bowl.

  2. Refrigerate overnight.

Sauce
  • 1 cup brown sugar
  • 1 cup white wine
  1. Mix together brown sugar and white wine.

  2. Place chicken and marinade in baking dish. Pour sauce over top.

  3. Bake at 350 degrees 50 minutes or until done.

  4. To serve place chicken on platter with juices strained and use for a

  5. gravy over the chicken. Garnish with parsley.
